Wing woes: High prices shift sales

That’s why this piece yesterday in the New York Times was troubling. Wing wholesale prices have risen steeply and in turn, restaurants are reining in their wing specials. The shift has also given rise to the "boneless wing" – a seasoned slice of chicken breast that many foodies turn their noses at.

"A wing is a wing, and a wing has a bone," said Anita Freedlander, the owner of Rusty’s Family Restaurant and Sports Grille in Tucson, which specializes in wings and does not sell the boneless variety.
